A high-quality wine is the result of high-quality grapes that have to be rightly transformed. To achieve this, the company has adopted protocols aiming to exalt the intrinsic peculiarities of each grape variety.
These protocols are fulfilled by the technological equipment of La Guardiense, always more and more innovation oriented and as a result of this, in the past few years the company has been equipped with the latest technologies available in the wine industry. The working protocols that La Guardiense follows are:
- in the vinification process of white grapes, the company uses 8 soft wine presses and has at its disposal more than 2.5 million refrigeration units per hour, in order to control the temperatures of fermentation and cold maceration;
- in the vinification process of red grapes, the company has at its disposal an extractor of polyphenols, conic tubs for the cold-thermo-maceration, vinification machines at a controlled temperature with automated plants for the remix of musts and the vinasse draining;
- in the wine working process, the company has used for years a cold concentration machine, a reverse osmosis machine, a tangential filter, a set of autoclaves for the production of sparkling wines.
